Good morning all,
Does anyone know of fast, high protein breakfasts? Aside from the fact that I love McD sausage in their Sausage McMuffin Combo, is that it is loaded with protein - sausage, egg and cheese, and a reasonable amount of carbs - the English muffin. When I have had a bad night (arthritis pain waking me up), cooking breakfast is difficult. That's one of the big reasons I rely on McD so much for my standby breakfasts. I can't have (blood sugar issues) and don't like sweets for breakfast, or very early in the day for that matter. I would appreciate any ideas you may have.
Breakfast:
2 eggs, half a toast, butter, milk
Snack:
one Akmak cracker
Lunch:
Tuna sandwich w/ sprouts, water
Snack:
None

I'm sorry - I know that you should breakfast like a king and dinner like a pauper( is that right?) but I have never been good at breakfasts. I do have one, currently a cracker with cottage cheese, but I do it mechanically as I know I should eat breakfast. I am not much help here..I hope you find some good answers

Check out some of the egg mug scrambles that hungry girl does www.hungry-girl.com. She's got some great ideas! It's basically the bettern'eggs, and some sort of LF cheese (like laughing cow) and various veggies. Put it in the microwave and nuke for a few minutes.

ReplyDeleteMake egg muffins- ahead of time when you are feeling good. Just get a 12 muffin tin and cupcake liners. scramble some eggs about 12, seasoning,cheese, and veggies. pour egg mixture 3/4 full in cups. Bake at 375 degrees for 25-35 minutes. They will keep in the refrig. for a week. To reheat just pop in microwave for 2 minutes.

ReplyDeleteI bet you can freeze them. Just not sure how long in the microwave. Probably try a minute at a time to see how long to reheat. Good luck! I just made some for this week! Cheese and spinach. Yum!
